Recunosc, Nico Lontras a fost unul dintre favoritii mei in showul Top Chef. Mi-a placut ca om in scurtul moment in care l-am cunoscut prin intermediul lui Cristi Roman (foto foodblog.ro), apoi i-am urmarit postarile pe facebook si evolutia in primul show de televiziune dedicat bucatarilor profesionisti.

"Alegerea mea pentru antreu a fost:  Burta de porc slow cooked (gatita la temperatura joasa, pentru 4 ore) pe folie rodie, dulceata de mere si carnati de Plescoi, piure dulce de usturoi, foite de salota marinate, salata de ciuperci enoki si flori de mar. 

Am ales acest fel de mancare pentru ca este traditional si am vrut sa arat ca si cu un produs ieftin, care de obicei e prezentat banal, se poate crea o farfurie ''mai altfel''. Din punctul meu de vedere, balanta intre folia de rodie dulce acrisoara, pireul de usturoi (fiert in lapte de 3 ori, astfel incat gustul puternic de urturoi a disparut), , burta de porc putin sarata si dulceata din carnati de Plescoi putin iute, a fost foarte bine echilibrata.

Reprosul din partea juriului, la aceasta farfurie a fost cantitatea prea mare, 3 cuburi mici de burta, 6 inghitituri in total. Daca as pregati acest preparat intr-un meniu de ''fine dining'' cu 7 feluri de mancare, probabil ca as fost de acord. Atunci ar fi fost suficienta o bucatica. Insa la un meniu cu 3 feluri de mancare, eu personal consider ca 70-80 de grame de carne nu este mult pentru un aperitiv, dat fiind faptul ca garnitura care acompania carnea, a fost foarte mica cantitativ.

Burta am copt-o la temperatura joasa pentru mai multe ore. Inainte cu putin timp de a o scoate din cuptor, am ridicat temperatura, astfel incat soricul sa devina crocat. Acesta l-am servit in farfurie, separat de burta de porc. Baza farfurie a fost facuta din suc de rodie cu agag-agar. Foitele de salota le-am marinat in otet de mere si zahar, piper negru si dafin. Piureul de usturoi l-am fiert de 3 ori in lapte, pana gustul de urturoi a fost eliminat, apoi l-am pasat si condimentat. Gemul de mere si carnati Plescoi, de care sunt foarte mandru de altfel, l-am gatit la foc mic. Merele, impreuna cu carnatii taiati cubuti mici si sucul de la o jumatate de lamaie, le-am fiert in suc de mere, pana cand compozitia s-a omogenizat. Am completat farfuria cu ciuperci enoki si flori de mar", a explicat Nico pe facebook.

Felul principal al lui Nico Lontras in finala Top Chef: Duo de Cod Negru: 56 de grade sous-vide cod negru, invelit in alge Nori, pe un crocant din panko (pesmet japonez) si ierburi aromatice, Zabaione din Gewürztraminer de Jidvei; ''pralina'' din burta si coada de cod negru cu ansoa, pe un pat de praz, trio de sfecla rosie ( carpaccio, marinat in ulei de masline si cimbru si sfecla murata), piure dulce de mazare si Dulse (alge de mare)

"Inspiratia mea pentru acest preparat a venit din meniul castigator Bocuse d'Or 2009. Se pare ca pentru Bocuse d'Or nu a fost o problema repetarea in farfurie a pesmetului. Deasemenea, am ales sa fac o ''piftea'' din burta si coada pestelui, care de obicei se arunca si care, din punctul meu de vedere, ar fi trebuit sa aduca un plus, nu un minus!! La acest preparat nu am folosit sare deloc, deoarece farfuria mea avea elemente sarate natural (Dulce si Nori), pifteaua mea a fost condimentata doar cu ansoa.

Din pacate, in special pentru Dl. Bercea, invitat special, am avut o farfurie colorata, chiar prea colorata, si care pana la urma a vazut pe farfurie doar pesmetul! La prezentarea meniul am rugat juriul sa guste mancarea ca un complex, toate elementele de pe farfurie impreuna, unde aveam un piure dulce de mazare, 3 feluri de sfecla (fiarta si marinata in otet, coapta si marinata in ulei de masline si cimbru,si carpaccio), Zabaione din Gewürztraminer de Jidvei, care avea un gust aromat.

Ca si textura crocanta am avut pe farfurie un crocant facut din panko si ierburi aromatice, apoi am avut Dulce (alge de mare) prajite. Fileul de cod l-am invelit in alge Nori, vidat si gatit sous-vide la o temperatura de 56 de grade, pentru o jumatate de ora. Din pacate juriul a gustat doar elemente individuale de pe farfuria mea, care bine-nteles, gustate asa pot parea prea sarate, prea dulci sau prea acre. Balanta de arome si texturi, din punctul meu de vedere, erau in perfecta armonie, unde dulcele din piureul de mazare completa saratul din alge si era in balanta cu aciditatea din Zabaione, unde crocantul din panko si pireul de mazare moale au fost in balanta cu textura sfeclei.
Mi s-a reprosat ca aveam doua feluri de mancare pe farfurie. Asa l-as si prezentat: Duo de cod!
O versiune a acestui prefarat, mai simplificata, o am in meniul restaurantului unde lucrez. Este un preparat foarte apreciat si nicidecum sarat", a adaugat Nico.

Desertul lui Nico Lontras in finala Top Chef: Capsuna umpluta cu crema de branza, in jeleu de vin alb; inghetata de banane si curry, cu foita de bomboane Halls; macarons cu ganache de ciocolata si menta si bomboane surpriza


" Un desert de care nu sunt mandru in totalitate!! Dar sunt foarte mandru de gust, idee, prezentare. Intr-adevar am gresit la macarons. Eu zic ca se pot face macarons intr-o competitie (s-au facut si in altele) si nu inseamna ca daca nu e lasat la maturat nu poate fi facut si degustat. Eu cred cu tarie ca macarons de pot face intr-o competitie. Ca nu mi-a iesit mie, e una, ca a fost considerata greseala capitala, e alta. Nu am putut sa nu observ din partea cui au venit cele mai mari critici. Din partea unui domn care crede ca a risca intr-o competitie, denota lipsa profesionalismului. 
Macaronul meu nereusit a fost umplut cu ganache de ciocolata si menta si decorat cu bomboane surpriza, care creau senzatia de explozie in momentul degustarii.
Inghetata de banane si curry, foarte apreciata de altfel, facuta cu azot lichid, a fost foarte cremoasa si plina de savoare. Am decorat inghetata cu o foita crocanta si aromata, din bomboane Halls.
Jeleu din vin de Jidvei a avut in interiorul lui o capsuna umpluta cu o crema de branza. Pentru ca jeleul sa fi avut textura potrivita, ar fi avut nevoie de putin mai mult timp la frigider. Nu sunt multumit de felul cum arata!! Am decorat jeleul cu un glob din fire de caramel", a incheiat Nico.

Doua cuvinte despre Top Chef!

Orice show cu miza naste discutii si controverse. Eu unul n-as vrea sa ma lansez in speculatii si nici sa dau curs unora sau altora. Vreau sa ramin in urma acestei competitii culinare doar cu bunele. Sincer, am descoperit niste oameni frumosi, pasionati si foarte talentati. Toti concurentii merita aplauze la scena deschisa pentru acest maraton culinar cu zeci de probe, cu zeci de provocari, una mai dificila ca alta! A fost un spectacol agreabil din care sigur s-au creat cativa eroi. Printre ei clar este si Nico Lontras, poate si Ionut Lupu, cu siguranta Dragos Bercea (si el putea fi printre finalisti, caci avea talentul cu carul, si-s convins ca daca se intimpla asta gurile rele ar fi spus ca doar datorita tatalui sau a ajuns acolo), iar multi dintre noi vom cauta in Brasov restaurantul lui Giovanni Piselli.

Acum intervine o problema semnalata si de Cristi Roman mai de mult: in Romania nu-s manageri care sa stie sa gestioneze potentialul unor astfel de oameni. Pentru ca Nico Lontras ne-a dovedit tuturor ca are valoare si ca este un om deosebit.

In mod normal, ar putea sa semneze un contract pe bani frumosi cu orice restaurant de 5 stele din tara asta, plus ceva contracte de sponsorizare cu diverse firme ...

Voi ramine insa fanul lui Nico pentru ca m-a cucerit prin felul sau de a fi, mi-a placut cum si-a strins fetita in brate la final si, inainte de toate, mi-a placut pentru ca s-a declarat un familist convins! Ma bucur ca primul episod al Top Chef ne-a adus in prim plan acest fel de oameni!

Eu cred insa ca daca Nico nu risca la desert cu Macarons batea cu 2-1 . Acolo s-a jucat meciul. Tudor Constantinescu a reactionat imediat spunind ca un macarons de calitate are nevoie de 16-48 de ore de maturitate ...

Sa fim seriosi.Nu poti sa tii cont doar de asta.
Preparatele lui Nico au avut mult mai multa stralucire,chiar daca si Pisseli a fost foarte talentat.
